I put together a wine bundled app with the various dependencies set up except THUG2. Some bugs fixed in the most recent update enabled full Wine support, and I am using this every day on my Mac with a PS3 controller.
It should just unzip and run. If you have an Intel mac, could you try it out and report back your results? For me it runs well enough to play without stuttering or graphical issues. There is a substantial bootup time, but the game runs as you would expect for your hardware once it's booted.

You need the Game folder from a THUG2 installation.
Extract zip.
Option+Click (Right Click) the THUG Pro application and click Show Package Contents.
Browse to Contents > Resources > wine prefix > drive_c > THUG2
Place Game folder from THUG2 in THUG2 folder.

I've already setup THUGPRO to run on my Intel MacBook but I try this out for you and report back.

For maximum performance you can try enabling Turbo Boost. On my MBP this makes a drastic difference.

Had one bug. If I was to edit my skater, the game would crash the next time I would join single free skate or multiplayer. I finally realized I had to save and then quit, for it to actually save my skater. When I reopened I was able to play fine. Game runs great. Surprisingly well actually. Good frame rates. It's funny how nostalgia always makes things look better than they look in reality. Not the case here lol. THUG looks better than ever on my 15" Retina Display. Amazing work.
